Brief summary
The quantitative and qualitative composition of main biologically active components of the lyophilized caviar of Kamchatka?s green sea urchin S. droebachiensis was studied. The study was carried out using gas, liquid and thin layer chromatography, spectrophotometry and MALDI-MS. Methods are proposed for rapid assessment of the quality of sea urchin caviar based on data of fatty acids and carotenoids composition, and on the measuring of an organic phosphorus and iodine.
